monday

Jenn, here's the lettuce wrap recipe.

3 chicken breasts
1/2 c water chestnuts, chopped
2/3 c sliced mushrooms
1 garlic clove, minced
8 lettuce leaves

Stir fry sauce
4 T light soy sauce
2 T brown sugar
2 t sugar
1 t vinegar
2 T water

boil chicken, drain & cool. Chop or shred. Saute mushrooms, onions, & garlic for 4 minutes. Add chicken & water chesnuts. Mix with sauce until coated. Heat & serve in wrapped in lettuce.

As you probably noticed I also added green peppers, cauliflower & celery.

On monday I'll be cooking Beef & Cheddar Enchiladas.
