This recipe comes from my mother-in-law, Kathy. It is soooo good and very easy!
1 lb. ground beef (I use ground turkey and it works fine)
1 can tomato soup (10 ounce size)
1/2-1 cup low-fat sour cream, optional, but I recommend it :-)
1/2 cup salsa
1/2 cup water
6 flour tortillas, *cut into 1-inch pieces
1/2 cup shredded cheddar cheese (I used monterey jack because I was out of cheddar)
Brown meat and drain fat. Stir in soup, sour cream, salsa, and water. Bring to a boil. Reduce heat to low and cook for 5 minutes. Meanwhile, cut tortillas into bite-sized pieces and stir into mixture. Cook on low for 5 more minutes, constantly stirring. Top with cheese. Makes 4 servings.
*Kimri mentioned that the tortillas were really thick. I've made this dish before and had never had the tortillas come out thick like they did this time. Here's what I did differently. I stacked the tortillas together on a cutting board, then cut through all of the tortillas into bite-sized pieces. Then I just grabbed the pile of tortilla and threw it into the pan and mixed it in. I think some of the tortilla stuck together, making it thicker.
