Monday meal & recipe

Hey ladies,

I might prepare these early just so I can have some fun on the 3 day weekend. If you are going to be gone let me know:)

I'm going to do Chicken Enchilada casserole. I like to add beans for fiber but it just doesn't taste as good with them so I decided to add homeade refried beans for a side. Chris LOVES homeade refried beans. Hopefully you guys do too:)

And here's the recipe from last Monday (for Jenn P) plus where I tweaked it because I make up recipes as I go.

Chicken Favorite
4-6 chicken pieces (boneless & skinless)
4-6 bacon slices (I used turkey bacon...I hope you didn't mind)
8 oz sour cream (I usually put more sour cream in...I like the taste better)
2 cans cream of chicken Soup (I like mushroom soup & I usually decrease)
(I like to add dehydrated onions for more flavor)
Spray crock pot with nonstick spray. Wrap each piece of chicken in bacon. Mix soup & sour cream together. Pour over chicken. Cook on low 5-6 hours. If you do a big crock pot I'd cook for longer or do it on high.
